Ugo is located in the regional Akita Prefecture of Japan and is famous for its delicious Nishimonai soba noodles. This traditional noodle dish is created by hand-kneading a mixture of funori seaweed and buckwheat flour in order to give the noodles a rich flavour and chewy texture. Join us as we travel from Tokyo to Ugo to learn how to make Nishimonai soba noodles from a soba noodle master. It’s all here in our latest episode of Japanoizy, our original travel video series exploring the best of Japan.
